In the middle of Suicide awareness week… approaching all the 9/11 memorial images flashing across the web… 1 week before my 38th birthday… I would like to pause… and tell a love story…

Sunday night… 8 pm, I finally … Stop focusing on the self loathing… and the injustices…. resentments… insecurities… fears… I finally agree to a night out… Just the two of us… There is a Super Nova! We will never see anything like this again… We pack an ill-gotten telescope (Ill gotten because I was ill over what was spent on it) and swing through Walgreen’s for canned coffee (this was before I discovered the magic beans … Addicted to Coffee ), and gummy coke bottles (find some, trust me)… and we set off driving through the desert… These moments are so rare… Rare just the two of us… and we talk, about ridiculous things… we cringe a little over insecurities… Walk through every horrible past relationship we have had and make comparisons to the relationship we have now.. we discuss our isms….

 Then, on some god forsaken road… in some crazy little town… we stop… We get out… Careful not to shut the doors, you know… incase the boogie man comes… and we laugh… and we giggle… and we ooohhh and ahhhh at the night sky… He fumbles with the telescope… trying in the dark to make it work… We take turns down on the pavement, trying to see anything in the great black vastness of space… We line it up with the google stars app… but to no avail… we hide in the car as another vehicle passes… prepared to run… leaving the telescope … if they are the dreaded mass murders that always find stupid young kids in the middle of no where… I sit in the back of the hatch back… he sits on the ground… cursing the telescope… and I am laughing hysterically as the clouds set in… making the stars invisible to the naked eye… even the moon… and he is so frustrated…

… and I tell him he really is the best thing that has ever happened to me… and he stops… crawls across the pavement on hands and knees… and kisses me.. and tells me he is so glad I think so… and asks me to marry him… Ring in hand… I think I said the word yes… I believe if not, my kisses confirmed that I wanted too… I so want too… I slip the ring on my finger… I cannot see it in the dark… I am ridiculously crazy in love with him… we have a lot to get through… telling the kids… telling the exes (oh god.. the crazy other parents of our children)… Figuring out logistics… convincing me, that 38 isn’t too old… and the world isn’t too horrible… and I deserve to be happy and healthy … and  Forgetting everything else… I will leave this one as the love story 🙂

So Called … “Pink Slime”… Smiffbib!

Did you freak out when you read it?? I mean … We don’t frequent fast food joints often anyways… trying to achieve a goal of 75% organic in our diet … But when they announced the schools were using it?? I instructed the smalls to only eat salads at school… because let’s be honest… I will never be the mom that packs home lunches… I consider mixing organic granola… and greek yogurt for breakfast and serving it up home cooking… I begged the small child to not let his father take him to McDonald’s on his weekends with him… and if they had to eat that way… and let’s be honest.. they do… to only eat Wendy’s …. I work with this amazing woman named Gale… Who not only provides my body with caffeine in every type of way ingestible… but is fascinating to listen too… and she shared with me this letter to the editor she wrote our local tribune in response to their scathing report on it… and well… stop F*ing panicking… Pink Slime? Smiffbib!

Aren’t we elitist?

With more than seven billion on the planet, I applaud the food scientists who have developed methods to use all of the slaughtered animal.  Aren’t we to be “stewards of the planet” using all of our resources wisely?  I understand that 1 ½ million more cattle have to be raised to make up the deficit in mechanically separated meat (MSM) that will be discarded.

I’ve used MSM to make chili, chicken/apple sausages and more high-quality protein products.  Everyone can’t have sirloin steak.

Beehive Machinery right here in Utah developed the process and it is valued around the globe.  Yes, we strive to improve this creative technology and the meat safety.  But we cannot afford to dismiss it.  Clearly label the MSM and let consumers vote with their wallets.

Now… That being said… It still doesn’t sound good… I agree… I don’t want to eat it… But then she put it to me this way… Apple Sauce… We eat organic apple sauce at my house… Do you think that apple sauce only contains the white sweet portion of the apple? and it was lovingly hand cut from the core? or was it ran through a machine.. they cores it, and never claims to have gotten out every seed… and every little speck of skin… No… that would be too expensive… I wouldn’t be able to afford to keep smallest child in her drinkable apple sauce packages which she will drink as many as I let her a day… and it is so good for her… It is Mechanically separated… and it doesn’t have any added sugar… and it’s not something else textured and colored and sugared to look like apple sauce…  Okay.. So I am past the first issue…

….The second issue is this…. product is treated with ammonium hydroxide as an antibacterial and then frozen into 60 lb. blocks. I question the value of this treatment as the product is only sold frozen and it was used for the first 10 years without the treatment. In the last few years, Cargill Inc. has begun producing a similar product called Finely Trimmed Beef (FTB) and uses citric acid as an antibacterial. At the ground beef processing plant, the LFTB is ground directly from the frozen state and mixed at no more than a 15% level with other lean and fat beef trimmings before final grinding. USDA ruled the LFTB product did not have to be labeled separately since the original raw material it came from is beef. … Gross right? … However …

…If this product is not used anymore, the meat industry will be obliged to grow or import about 1.5 million more cattle each year according to Meatingplace.com My feeling is that USDA will eventually change the labeling rules to make it plain to the consumer which ground beef has LFTB and which does not. If that happens, I think a fair amount of grocery store consumers will choose the cheaper product with LFTB  because it works well in burgers or recipes and is safe. However, I do not believe the major QSR chains (McDonald’s,  BK, etc.) will ever use it again due to the current furor. Wendy’s has never used it because their burgers are from fresh meat only and LFTB is always frozen… Like school lunches…

So there you go … It is what it is… Take it or leave it… but at least know what it is… Smiffbib …

Smiffbib – A History Lesson

Have you ever asked your child not to talk back… ever answered the petulant “don’t care” with… then you wont care if I throw this toy away… how many times have you said “don’t you tell me no!” …. Usually it is the parent that has to come up with creative ways to make these conversations take a constructive turn and try to instill respect for others balanced with enough self respect to speak your mind and value your own feelings. Not me, Not with my son… after several of these run ins…at the expected ages of somewhere in between 2 and 3ish … one day I softly tell my son… again… that while it is okay to feel anger, it is not okay to express it in such a way that would send a buzz light year action figure sailing through the air at his teen aged hormone enraged sister, who is really too old to be drawn into this pissing match by a toddler… but that is another entry…. His entire face turned red in frustration… his lower lip was shaking knowing he was in control of this ending in a simple time out… or turning into a full fledged meltdown whilst said sister watched with a satisfied smirk… and in that moment I watched that tiny lil cherub face skewed into a demonic expression as he has  this battle of wills… I wondered if he was literally biting his tongue to keep from speaking… I had always wondered if that was just an expression… when he whispered the word “smiffbib”… what? i said? I hadn’t understood him… oh wait… because it made no sense and I had never heard this before… “Smiffbib” he said more clearly… “is that all you have to say for yourself?” I asked… puzzled… but impressed that he hadn’t screamed no… or thrown his little body on the floor in a seizure like spasm… “Yes.. that’s it… Smiffbib” and he smiled as he walked over to serve his time out sentence… I knew then… that he had won… I wasn’t sure at what yet.. I mean.. he was doing his time out… he was not spewing hate at his sister… or myself as sometimes toddlers do… He was quietly sitting in timeout for his three minutes and not making a dive for that god forsaken buzz light year that he has been dragging around since birth to save it from being taken away for the rest of the day…. but clearly from his actions…. he was sure he had won…. I have the clarity of mind to take this out he has given me.. and let it go… turning on the sister to remind her she is the older one… and to act like it… and leave the room to finish dishes before the drawn out whine of ” bbbbuuuuutttt Moooommmmmm” has finished escaping her mouth… And completely forget the incident…. MY son however did not…. A few weeks later I am telling him through an exhausted haze my practiced speech of if he doesn’t get out of the bathtub he will catch a cold… all the heat is clearly gone from the water… it is colder than room temperature… and I am holding a towel open for him to come to wrap in and get warm… when he says it again… “Smiffbib”….. What? this time I smile… so the first time wasn’t an accident… I was right… He had concocted something I couldn’t yet understand…. Do you want to catch a cold and go to the doctor? “Smiffbib mom”…. “Son”… exasperated… “don’t make me count”… He doesn’t, he rarely does… he is an extraordinarily well behaved child… we joke about it … its actually a little terrifying… He has never pushed a child in line for the slide… taken a toy from another child… hit … bit…. spit… nothing… the only time he resembles what you would expect from a happy healthy little rascal is all reserved for his sister… who he worships… and follows… and cries for.. and laughs for.. and loves more than I ever thought possible…. She taught him to write his name as a surprise for me… they worked on it for weeks… his name has 18 letters… they sing a song about everything… when they walk around the block together and I have the windows open I can hear them coming… Singing in a war cry kind of march… “Were almost home… Were almost home”! .. They build forts… they play games… They are not both from my womb… but they don’t act like it… and as crazy as a teen can drive a young mother… her relationship with him saves her life more than once …. Smiffbib became a house hold word… it spread from my vocabulary to that of my friends… making several Facebook status updates… It made me angry several times when it was a brush with danger that was met with that response… and made me giggle when overheard in play… Ive heard it given in advice …. “Sometimes you just have to say Smiffbib”… I hear told to another that is worried about what people think about her…. And one time it made me cry… after his surgery… when they took out the tumor… and I was rubbing vitamin E on his little incision in his five year old crook of his neck… “Does that hurt angel boy? I’m so sorry” he was cringing… “Smiffbib”…. It gets retired sometimes… for a year or two… He is highly offended when he hears others use it… It belongs to him … Until the day we bought the domain… He is twelve now… and intends to get it in Webster’s dictionary… Smiffbib has several meanings… it means No, I don’t care, you cant make me, I feel sorry for myself, I have too much pride, This argument is over, I’m at the end of my rope, but what it really means… is I may have to conform… You may think you can domesticate me like some kind of wild animal… and you can force me to behave.. and teach me these rules that I will not break… but you can’t kill my individuality… you can’t squash my spirit… Smiffbib…. The socially acceptable “Fuck you”.
